Raspberry cream is a raspberry liqueur made from a maceration of raspberries.
As for its cousin blackcurrant, everything begins with a rigorous selection of the variety. Indeed, there are more than a hundred different raspberries. Each with its color, taste and specificity.
We use for this liqueur an old and rustic variety, which gives firm, fleshy, ruby red fruits, very fragrant and slightly tart.
Thus, our generous raspberries macerate for a minimum of two months in a mixture of water and French surfin neutral alcohol. It is this long but essential step that allows to extract all the finesse and aromatic richness of this small berry.
Finally, it is added to the infusion thus obtained the right dose of French white sugar. In this balance, between freshness and creaminess, we find the purity and delicacy so characteristic of raspberry, to the delight of our taste buds! As for its color, it is completely natural. Indeed, no dye is added. Thus, the color can fade over time by the phenomenon of oxidation. To learn more about the conservation of liquors, Vincent Briottet answers your questions in video.
As a result, you can drink raspberry liquor in different ways. Alone for purists, accompanied by ice, with a dry or sparkling white wine, or as a cocktail.
And if you revisit one of the greatest classics of mixology, by making a raspberry margarita.
To do this, mix in a shaker 3 cl of Tequila, 1.5 cl of Curaçao Triple Sec, 1.5 cl of raspberry liqueur and 3 cl of lemon juice. Then serve in a chilled margarita glass.
